Apple Cake

A lovely coffee cake, for breakfast or in the evening. Very easy to make, just mix, bake and success is assured. It is the cake that I have prepared upon request for all family events and has been received at my grandmother’s house as a queen on her throne. It might seem complicated to prepare but it is one of the most delicious cakes to make.

Ingredients

3 cups all-purpose flour
3 apples such as Granny Smith, peeled and sliced irregularly
3 eggs
1 1/2 cup brown sugar
1 cup vegetable oil
1/2 cup orange juice
1/2 cup chopped walnuts
1 tablespoon orange zest
1 teaspoon vanilla extract or seeds from the pod
1 teaspoon ground cinnamon
1 teaspoon baking soda
pinch of salt

For the icing
1/2 cup cream
1/4 cup sugar
2 tablespoons unsalted butter
1/2 teaspoon baking soda

Preheat the oven to 350 degrees. Mix the orange juice, eggs, oil, sugar, flour, orange peel, cinnamon, baking soda, salt and vanilla extract in a bowl. Add the apples and walnuts. Pour into a buttered ring mold and bake for about an hour.

For the icing:
Melt the butter, cream, sugar and baking soda in a saucepan and cook until it boils. Pour the syrup over the cake after it comes out of the oven, but while it is still hot, so it will absorb the icing.
