Chocolate Cake

For chocolate lovers, another marvelous recipe by Nigella Lawson, just how she does it.
With this chocolate cake pleasures are heightened.
I made it for a birthday and it was the first time there were no leftovers left. Totally delicious!

INGREDIENTS

For the cake

  • 3 eggs
  • 2 2/3 cups of all-purpose flour
  • 1 1/3 cup cold water
  • 3/4 cup + 1 tbsp. of brown sugar
  • 3/4 cup unsalted butter, melted and cooled
  • 1/2 cup + 2 tbsp. of sour cream
  • 1/2 cup of corn oil
  • 1/4 cup of cocoa powder
  • 2 tsp. of baking powder
  • 1 tsp. of baking soda
  • 1 tbsp. of vanilla extract
  • 1/2 tsp. of salt

For the frosting

  • 6 oz. of dark chocolate (70% cocoa)
  • 1 3/4 cup of sugar sifted and powdered
  • 1 cup + 2 tbsp. of butter creamy unsalted
  • 1 tbsp. of vanilla extract

PREPARATION

Preheat oven to 350 degrees. Butter two baking pans, 11 inches.
In a bowl mix flour, sugar, cocoa, baking powder, baking soda and salt.
In another pan, beat eggs, sour cream and vanilla until well incorporated.
With an electric mixer combine butter and oil. Then add the water and add all the dry ingredients, beating at low speed, add the egg mixture and continue blending until mixed.
Pour the mixture into molds, bake for 45-50 minutes, or until a toothpick inserted into it comes out clean.

For the fudge:

Melt the chocolate in the microwave for two to three minutes.
In another bowl beat butter until smooth and creamy, add sifted powdered sugar and continue beating, slowly adding the vanilla and chocolate until smooth.
Fill the cakes with a quarter of fudge and the rest spread it on the top and sides with a kitchen knife.
