Pumpkin Soup

A pumpkin soup is ideal for Thanksgiving Day, but in Latin American countries it’s a common meal. Every family has its own recipe and it can be as simple or as sophisticated as you’d like depending on the seasoning you chose to add.

INGREDIENTS

6 to 8 cups of water
4 cups of diced pumpkin
2 leeks
1 onion
1 apple, peeled and chopped
4 tablespoons of butter
herbes de Provence
pepper
salt
carrot or potato, optional
cream, optional

Melt butter in a saucepan, and cook the leek and onion until wilted. At that time, add pieces of pumpkin, apple and water with salt, pepper and herbs de provence letting it cook until pumpkin is tender. Let sit and blend to form a thick cream. At this point, if desired, add the cream.

For an exotic touch, instead of adding cream use coconut cream, coriander or curry, and for non-vegetarians can substitute water for chicken broth.
