Onion Pignoli Marmalade

A festive homemade hors d’oeuvre for the holidays. You can make it ahead of time refrigerate in a jar and assemble few minutes prior serving. Great to use as a topping on brochettes or you may use it as a sauce for a rotisserie chicken or a baked ham.

Ingredients
brie cheese
a baguette
1 large red onion
1/3 cup toasted pignolis
1 tablespoons herbs du provence
1 tablespoons honey
2 tablespoons sherry
1 teaspoon balsamic vinegar
3 tablespoons olive oil
pinch of salt

Toast pignolis and set aside. Cut a baguette into a diagonal slices, drizzle with olive oil and bake in oven until toasted. Peel the onions, cut it in half and finely slice. In a sauté pan with olive oil at medium high, cook the onions until they start to caramelize. Continue cooking them at medium low, adding the herbs du provence, honey, sherry, balsamic vinegar, salt and the toasted pignolis. Slice the brie cheese place over the toast and pour over a teaspoon of the onion marmalade.
