Fresh Homemade Tzatziki

This fresh homemade tzatziki sauce can be served as dip for an appetizer with warm pita, as an accompaniment for chicken skewers, dressing for a salmon, and it’s a great sauce for your souvlaki, or quinoa burgers.

Ingredients
2 cups Greek yogurt
1 large cucumber or 2 small, peeled
2 garlic cloves, minced
2 tablespoon fresh dill, finely chopped
2 tablespoon fresh mint, finely chopped
1 tablespoon olive oil
1 teaspoon salt

Peel the cucumber, slice in half, remove the seeds and finely dice. Sprinkle with salt and place in a sieve turning over a couple of times and pressing down. Let it stand for about 30 minutes to drain well. Dry with paper tower. Combine the cucumber with the yogurt, the garlic, olive oil, dill, and mint. Mix everything together and season with salt.

Some people like to grate the cucumber which is perfectly ok, just a matter of taste. You should still drain them to release all water.
