Named in honor of Queen Victoria, this sponge cake uses the same measurements of butter, flour and sugar.
INGREDIENTS
For the base
- 4 eggs
- 8 oz. of butter
- 8 oz. of self-rising flour
- 8 oz. of sugar
- 2 tsp. of baking powder
For the filling
- 4 tbsp. of strawberry jam
- ½ cup of whipped cream
For the decoration
- Powdered sugar
PREPARATION
For the base:
With a wooden spoon or electric mixer, mix all ingredients until incorporated and creamy. Divide mixture into two buttered mold of 20 cm in diameter and place them in a preheated oven at 350 degrees for 20 minutes.
When the two bases are baked and cold, unmold onto a flat surface. Spread two tablespoons of jam on the surface of each, then place a layer of whipped cream, join both sides and sprinkle with powdered sugar.
