It’s all about having the fragrant star.
A comfort food soup. A carrot soup thats simple to make. It’s like a blanket to warm up the coolest days. It’s vegetarian, vegan, parve, and lactose free.
Ingredients
6–8 carrots, chopped
1 leek, chopped
1 onion, chopped
1 garlic clove, crushed
juice of 2 oranges
1 teaspoon turmeric
1 teaspoon anise seeds
2 anise star
4 tablespoon olive oil, for sautéing
2 cups almond milk
2 cups water
salt and pepper to taste
In a big pot, heat the olive oil over medium. Sauté the onion and leek until the onion is translucent. Add the garlic, the anise star, and anise seeds. Cook for a little while, stirring. Add the carrots and the turmeric, and stir until everything is well coated with the olive oil. Cook everything for another few minutes, then add the orange juice and water. Bring to boil, reduce heat to low, cover the pot and cook for about 30 minutes, until carrots are tender. Remove the anise stars and blend the soup in batches, adding in the almond milk. Return soup to the pot to warm it up and season with salt and pepper to taste.
