Smoked Salmon and Mustard

Smoked Salmon and Mustard Dressing with Potato Pancakes or Crostini

Ingredients

8oz smoked salmon
goat cheese
micro herbs (I used micro kale)
For the mustards dressing:
2 tablespoons honey mustard
1 tablespoon Dijon mustard
1 tablespoon shallots cut into small pieces
1 tablespoon of little capers
1 tablespoon of fresh dill chopped

For the pancakes:
(makes about 16 pancakes)
4 boiled potatoes
4 tablespoon flour
3 eggs
1/4 cup milk
salt and pepper
olive oil (for cooking the pancakes)

For the crostini:
1 baguette
olive oil

Preparation

For the mustard dressing:
In a small bowl combine all the ingredients.

For the crostini:
Cut baguette diagonal, drizzle with olive oil and bake it until golden and crisp.

For the pancakes:
Whisk the eggs, milk, salt and pepper. Smash the potatoes and combine with batter mixture. In a nonstick pan over a medium heat with a little olive oil, pour one big spoon of pancake batter. Flip when bubbles appear on the surface and cook them until golden.

If you decide to do the crostini or the pancakes, spread goat cheese, then a few slices of salmon. Drizzle with the mustard dressing and garnish with the micro herbs.
