Rice Paper Vegetarian Rolls


  • 1 oz. of cellophane noodles
  • 8 circles of rice paper
  • 1 peeled carrot cut in strips
  • 1 peeled mango cut in strips
  • 3 oz of bean sprouts
  • 8 leaves of fresh basil cut in strips
  • 8 leaves of mint
  • serve with satay sauce

Add noodles to a bowl with boiling water, let soak for 10 minutes covered.
Fill a large bowl with warm water. Place a washcloth on the table. For each roll,  introduce a sheet of rice in the warm water for 1 sec. or until soft, remove carefully and assemble the rolls on the top of the washcloth on the table. Add on one side of the rice paper: noodles already strained, the carrot and mango strips, Chinese bean sprouts, 2 basil leaves and two of mint.

Roll the rice paper like a cylinder and cover with a damp cloth to prevent drying. With a sharp knife cut each roll diagonally into 2 or 3 pieces.
