Due to the steamy and hot weather of Florida I have been wanting to eat fresh, mediterranean and cold food. I asked Marialuisa, a friend from the Spanish blog, decocinasytacones for her gazpacho recipe.
The gazpacho is a cold soup originally from the south of Spain, Andalusia. Made with raw vegetables. It’s refreshing, perfect to have during hot summer days.
Ingredients
2 lb of ripe tomatoes, peeled seeded and chopped
1 cucumber peeled, seeded and chopped
1 thick slice of country bread soaked in water
1 spring onion
1 garlic clove peeled and chopped
2 tbsp sherry vinegar
1/2 cup extra Virgin olive oil
salt
You can also add guarnición or garnishes. For example (you just need small amounts):
onion, finely diced
cucumber, peeled and finely diced
green pepper, seeded and finely diced
tomato, seeded and finely diced
croutons
In a food processor or blender puree all the ingredients, press mixture through a sieve and chill before serving.
A perfect summer dish!

The smooth, cold soup with all the garnishes looks fantastic. And, our weather is still hot enough here to need a refreshing dish like this!
Our hot weather seems to have flown the coop but our produce is still abundant and this gazpacho sounds completely fantastic!

I adore gazpacho, but I like mine to be a little chunky so I can bite into the beautiful vegetables. I’ve never thought about having them as garnishes. It’s gorgeous. Thank you for sharing your friend’s wonderful recipe.
