4 Golden Delicious apples, peeled and chopped
1 lemon, juice
4 tablespoon of butter
1/2 cup brown sugar
1 vanilla pod (seeds scraped)
2 tablespoons Brandy
left over brioche
For the cream:
2 tablespoons of sugar
1/2 cup heavy cream
1/2 tablespoons of cinnamon
In a saucepan melt the butter add vanilla seeds, sugar, apples and lemon juice. Cook for about 15 minutes. Add the brandy and simmer for 10 minutes. Butter the individual baking dish and place a slice of brioche. Fill with apples and cover with an other slice of brioche. Bake for abut 15 minutes or until golden brown.
In a sauce pan melt the butter, add the cream, sugar and cinnamon, stirring over a low heat. Serve warm over the apple pudding.
