These herb sandwiches couldn’t be simpler. Not matter what season it is, you can pull these together in minutes and head to the patio to eat them and dream of spring.
- Sliced sandwich bread
- 1 package cream cheese
- 1 cup finely chopped herbs (Use any combination of herbs you like. I used a combination of parsley, basil, chives, and watercress)
- 1 tablespoon lemon juice
Mix the cream cheese with the herbs, lemon juice, salt and pepper. Spread each bread with butter and two tablespoons of the mixture. Cover with another slice and cut into four. Dip the sides of your sandwiches in even more herbs.
